To make this PGI certified oil, we choose the best batches of olives throughout Sicily based on the vintage, usually always using the same cultivars: nocellara, biancolilla, tonda iblea, verdese.
With a bright green color, the PGI Sicily has a medium fruity, fresh and harmonious taste with notes of artichoke, tomato and grass and a right balance between bitter and spicy. To be used for the preparation of sauces, condiments for first courses, on pizza, salads, and raw fish.
